When most people think of smokers, images of beef and pork flash through their minds. Well not all smoked items need to be heavy or fatty. This quick, fresh salad might just change what you think of when you hear the word smoker.
2 cups Mesclun Greens
1Lb Smoked Mozzarella (See Smoked Cheese)
2 Tablespoons Balsamic Reduction
1 Tablespoon Truffle Oil
Salt and Pepper to Taste
Smoke the mozzarella with apple wood chips.
Dress the greens with truffle oil and season
Plate the balsamic and tomatoes
Place the cheese on top and make a nest of greens
